A new Decree (Ministry Decree No.195 of 6 August 2015) has been adopted by the Italy Ministry of Health recently, amending the test conditions of stainless steel articles intended to come into contact with foodstuffs.
The test conditions
should be:

3% acetic acid for 10 days at 40°C |
For objects used for short periods with heat or at room temperature with any type of foodstuff |
3% acetic acid at 100°C for 30 minutes |
For cooking and dining cutting implements used for short periods with heat or at room temperature |
3% acetic acid at 70°C for 30 minutes |
For objects used for short periods with heat or at room temperature, that can only be used in contact with water |
Distilled water at 100°C for 30 minutes |
For reusable objects three successive "attacks" are required and determine on the desorb solution from the third "attack". |
